  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Peel about 1.5 pounds (680 grams) of carrots and cut them into evenly sized sticks or rounds, about 2-3 inches (5-7.5 cm) long.
  3. In a small microwave-safe bowl, melt 4 tablespoons (56 grams) of unsalted butter. Stir in 2 tablespoons (30 ml) of honey until fully combined.
  4. Place the cut carrots in a large mixing bowl. Pour the honey butter mixture over them. Add 1 tablespoon fresh thyme leaves, ½ teaspoon garlic powder (if using), ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper. Toss gently with tongs or a spatula until every carrot is coated.
  5. Spread the carrots in a single layer on the lined baking sheet. Avoid overcrowding.
  6. Roast for 25-30 minutes in the preheated oven. At about 15 minutes, carefully flip the carrots using tongs or a spatula to promote even browning.
  7. Check for doneness by inserting a fork; it should slide in easily but still offer slight resistance. Roast an additional 5 minutes if softer carrots are desired.
  8. Transfer the honey butter roasted carrots to a serving dish. Optionally, sprinkle a few fresh thyme leaves on top and serve warm.

Notes

For a dairy-free or vegan version, substitute butter with coconut oil or plant-based margarine and honey with maple syrup. If carrots brown too quickly, lower oven temperature to 375°F and tent with foil halfway through roasting. Toss carrots in warm honey butter mixture to ensure even glaze and caramelization. Cut carrots evenly for uniform roasting.
