  • 1 green or red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground beef (85% lean)
  • 14 oz canned diced tomatoes, with juices
  • 8 oz canned tomato sauce
  • 1 cup beef broth (or chicken broth)
  • 2 cans (15 oz each) kidney beans, rinsed and drained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper, sautΓ©ing until softened (about 5 minutes).
  2. Add the minced garlic and cook for another minute, until fragrant.
  3. Push the vegetables to the side and add the ground beef to the pot. Break it up with a wooden spoon and cook until browned, about 7–10 minutes. Season with salt and pepper.
  4. Stir in the chili powder, cumin, and smoked paprika, letting the spices toast briefly for extra flavor.
  5. Pour in the canned diced tomatoes (with juices), tomato sauce, and beef broth. Stir until everything is well combined.
  6. Add the rinsed and drained beans, mixing them into the chili.
  7. Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 25–30 minutes, stirring occasionally.
  8. Taste and adjust the seasoning. If you like extra heat, add a dash of cayenne or red pepper flakes.
  9. Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
