Cozy Creamy Chicken and Wild Rice Soup

  • 2 cups cooked and shredded chicken
  • 1 cup wild rice blend
  • 1 medium onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Dried thyme, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the wild rice according to package instructions, about 40-45 minutes. Set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced onion, chopped carrots, and celery. SautΓ© for 5-7 minutes until softened and fragrant.
  3. Add minced garlic and cook for another 1-2 minutes, stirring frequently.
  4. Push vegetables to the side of the pot and add butter. Once melted, stir in flour to create a roux. Cook for 1-2 minutes to remove the raw flour taste.
  5. Slowly pour in chicken broth while stirring continuously to prevent lumps. Bring to a gentle simmer.
  6. Add shredded chicken, cooked wild rice, salt, pepper, and dried thyme. Stir well to combine.
  7. Lower heat, cover, and let the soup simmer for 20 minutes to meld flavors.
  8. Stir in heavy cream and cook for an additional 5 minutes. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with fresh parsley.
