  • 1 lb ground beef (preferably grass-fed)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 tbsp tomato paste (no added sugar)
  • 1 cup beef broth (homemade or low-sodium store-bought)
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil or unsalted butter
  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 4 cloves garlic, peeled
  • 1/2 cup whole milk or cream (use dairy-free milk if preferred)
  • 3 tbsp unsalted butter, softened
  • Salt and pepper, to taste

Instructions

  1. Place peeled, chopped potatoes and whole garlic cloves into a large saucepan. Cover with cold water, add a pinch of salt, bring to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes or until potatoes are fork-tender. Drain well and set aside.
  2. Heat olive oil or butter in a large skillet over medium heat. Add chopped onions and diced carrots; sauté for about 5 minutes until softened and translucent. Add minced garlic and stir for 1 minute until fragrant.
  3. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned all over, approximately 7-8 minutes. Drain excess fat if necessary.
  4. Stir in tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Pour in beef broth and bring to a simmer. Cook for 10-12 minutes, stirring occasionally, until mixture thickens slightly. Add frozen peas in the last 2 minutes.
  5. Return drained potatoes and garlic to the warm saucepan or large bowl. Add softened butter and warm milk. Mash until creamy and smooth, seasoning with salt and pepper to taste.
  6. Preheat oven to 400°F (200°C). Spoon meat filling evenly into baking dish, spreading out with the back of a spoon. Dollop garlic mashed potatoes over the top, spreading to cover filling completely. Use a fork to create peaks in the potato topping.
  7. Bake for 20-25 minutes or until potato topping is golden brown and edges bubble. Watch after 20 minutes to avoid over-browning.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

If filling is watery, mix 1 teaspoon cornstarch with cold water and stir in before assembling. Roasting garlic mellows flavor. Use Yukon Gold potatoes for best texture. Rest pie 5 minutes before serving for easier slicing. Tent with foil if top browns too quickly.
