Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (100g) brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk (or dairy-free alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes). Add the eggs and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Don’t overmix!
  4. Divide the dough in half and roll each portion into a rectangle, about 1/4 inch thick, on a lightly floured surface.
  5. For the filling, mix the brown sugar and cinnamon in a small bowl. Brush the rolled dough with melted butter, then sprinkle the cinnamon sugar mixture evenly over the surface.
  6. Starting at one end, tightly roll the dough into a log. Use dental floss or a sharp knife to slice the log into 1/2-inch thick cookies.
  7. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. While the cookies cool on a rack, prepare the icing by whisking powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the cooled cookies and let it set for 10 minutes before serving.
