  • 1/2 cup semi-sweet chocolate chips (90g)

Instructions

  1. Preheat your oven to 350°F (175°C). Let your skillet warm in the oven about 10 minutes before baking for extra crisp edges.
  2. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar using a wooden spoon or hand mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract, mixing well after each addition.
  4. In a separate bowl, whisk the all-purpose flour, baking soda, salt, and optional cinnamon until well combined.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Transfer the dough to your preheated cast iron skillet and spread evenly, filling about 3/4 of the skillet’s depth.
  8. Bake for 20-25 minutes, starting to check at 18 minutes for golden edges and a slightly soft, shiny center.
  9. Remove from oven and let cool for 5 minutes to set while keeping warm and gooey inside.
  10. Serve directly from the skillet, optionally with vanilla ice cream or caramel sauce.

Notes

Use room temperature butter and egg for best texture. Do not overmix the dough to keep the cookie tender. Start checking the cookie at 18 minutes to avoid overbaking. Tent with foil if edges brown too quickly. Chill dough for 15 minutes if too sticky. Sprinkle flaky sea salt on top before baking for a salty-sweet flavor. For gluten-free, substitute flour with almond flour and reduce slightly. For vegan, use coconut oil, flax egg, and dairy-free chocolate chips.
