  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with butter or non-stick spray.
  2. Pour the apple cider (about 1 ½ cups) into a small saucepan. Simmer over medium heat until it reduces to about ½ cup. Let it cool.
  3. In a large bowl, whisk together 2 cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, 1 teaspoon of cinnamon, and ½ teaspoon of nutmeg.
  4. In a separate bowl, use an electric mixer to beat ½ cup softened unsalted butter, ½ cup granulated sugar, and ¼ cup brown sugar until light and fluffy.
  5. Beat in 2 large eggs, one at a time, followed by 1 teaspoon of vanilla extract, ½ cup sour cream, and the cooled apple cider reduction.
  6. Gradually add the dry ingredients to the wet, mixing just until combined. Be careful not to overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
  9. Mix 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon in a small bowl. Brush the top of the bread with melted butter and sprinkle the cinnamon-sugar mixture generously over the top.
