  • 4 large russet potatoes, peeled and chopped
  • 1/4 cup unsweetened plant-based milk (like almond or oat milk)
  • 2 tablespoons vegan butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup smoky BBQ jackfruit (store-bought or homemade)
  • 1/2 cup avocado salsa (diced avocado, tomato, red onion, lime juice, and cilantro)
  • 1/2 cup spicy roasted chickpeas
  • 1/2 cup sautΓ©ed mushrooms with garlic
  • 1/2 cup steamed broccoli florets

Instructions

  1. Peel and chop the potatoes into even chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15-20 minutes or until fork-tender.
  2. Drain the potatoes and return them to the pot. Add the plant-based milk, vegan butter, garlic powder, salt, and pepper. Mash until smooth and creamy. Adjust seasonings to taste.
  3. Warm the jackfruit in a skillet over medium heat, stirring occasionally.
  4. Mix diced avocado, tomato, red onion, lime juice, and cilantro in a bowl. Season with salt and pepper.
  5. Toss canned chickpeas with olive oil, smoked paprika, and cayenne pepper. Roast at 400Β°F (200Β°C) for 20 minutes.
  6. Heat a small skillet with oil, add sliced mushrooms and minced garlic, and cook until browned and tender.
  7. Steam broccoli florets for 5-7 minutes until vibrant green and tender-crisp.
  8. Scoop mashed potatoes into bowls and add your desired toppings. Feel free to mix and match for a unique flavor explosion!
