  • 1 whole bone-in ham (about 810 lbs), preferably spiral-cut
  • 1/2 cup water
  • 3/4 cup honey
  • 1/4 cup brown sugar (light or dark)
  • 2 tablespoons Dijon mustard
  • 2 teaspoons chipotle chili powder (adjust for heat)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons unsalted butter, melted
  • Fresh parsley or chives, chopped (optional, for garnish)
  • Orange slices or zest (optional, for garnish)

Instructions

  1. Preheat oven to 325°F. Place a rack in the lower third of the oven. Unwrap ham and pat dry. Set cut-side down on a roasting rack inside a large roasting pan. Pour 1/2 cup water into the pan.
  2. Score the fat cap of the ham in a crisscross pattern, about 1/4 inch deep, to help the glaze soak in.
  3. In a small saucepan over medium heat, combine honey, brown sugar, Dijon mustard, chipotle chili powder, smoked paprika, garlic powder, black pepper, apple cider vinegar, and melted butter. Stir until sugar dissolves and glaze is smooth and glossy, about 3-5 minutes.
  4. Cover ham loosely with foil and bake for 1 hour (about 10-12 minutes per pound if using a different size).
  5. Remove foil and brush a thick layer of glaze all over the ham, getting into the scored crevices. Reserve some glaze for later.
  6. Continue baking, basting every 15-20 minutes with more glaze, until ham is deeply caramelized and internal temperature reaches 140°F. This takes another 45 minutes to 1 hour.
  7. If glaze starts to burn, tent ham loosely with foil.
  8. Remove ham from oven and let rest for 15-20 minutes before slicing.
  9. Transfer ham to a serving platter, garnish with chopped parsley or chives and orange slices if desired. Serve warm with extra glaze on the side.

Notes

Score the ham for maximum glaze penetration. Bake covered first for moisture, then uncover to caramelize. Baste often for a sticky crust. Let ham rest before slicing for juiciness. For gluten-free, check mustard and vinegar labels. For dairy-free, omit butter and use olive oil. Leftovers are great for sandwiches and keep well refrigerated or frozen.
